Soak the lentils in water for 8-12 hours (I usually do this overnight). Drain in the morning, then rinse and drain every day for 3-4 days or until sprouts have started to form. To prevent the lentils from exposure to airborne pathogens, keep the lentils covered with a damp paper towel if desired.
When the lentils have sprouted, combine them with the onion, bell pepper, lime juice, cilantro, and olive oil. Season with salt and pepper to taste and enjoy immediately or refrigerate until meal time.
