How To Cook When You Have No Kitchen: Sweet and Sour Tamari Ginger Turkey Meatballs

What would you do if THIS was your kitchen?

That’s right. For the next 3-4 weeks, this is going to be my cooking space. At first, I was pretty pissed. But then I realized maybe this isn’t so bad. There are plenty of people out there with much smaller kitchens that make it work every day. So as much as I might complain about not having an entire island of granite to cook on, perhaps it’s good to enjoy this slice of humble pie.

This process (we’re painting our house btw), has forced me to be a little creative in the kitchen to say the least. Even though we’re well into spring (it’s officially May), the weather has still been chilly and helped me make use of my slow cooker.

As you guys know, I’m a total meatball lover. I can’t say there’s anything super fancy about these meatballs. I’ve told you guys before how I tend to make different variations. But I decided to incorporate a ginger spread into this recipe.

What’s ginger spread you ask?

This isn’t to promote a product by any means. I simply found this ginger spread at my local health food market. You’re ideally supposed to use this in more sweet dishes (think toast, pears and cheese, etc.). But I thought that using this spread in my meatball sauce would add the perfect notes of sweetness along with some heat from the ginger. Coupled with salt from the tamari and a sour note from the rice wine vinegar, these meatballs truly are the perfect play on sweet and sour
Okay, enough small talk. Now for these badass meatballs.
Okay, one more last note. For those of you who are wondering, that salad in the background is actually a throwback to a detox recipe from last spring. My celery, apple, and lemon salad doesn’t exactly ‘go’ with these meatballs, but look at it this way: sometimes rules were meant to be broken! 😛

Sweet and Sour Tamari Ginger Turkey Meatballs
For the meatballs

  1. Whisk all sauce ingredients for sauce together and set aside.
  2. Mix salt and pepper into ground turkey. Roll into meatballs and place in slow cooker.
  3. Pour sauce over meatballs. Cook on high for 4 hours or low for 6-7.
