  1. Peel the apples and remove their skin. Then de-core and cut into 1 inch pieces. Make sure all parts of the core are removed, as this will lead to a bitter aftertaste. Also make sure the apples are cut to the same size so they will cook evenly.
  2. As you cut the apples, place them in a basin of cold water. This will keep them from discoloring as you keeping peeling and chopping apples.
  3. Cook the apples over medium heat with sugar until tender and soft (about 40 minutes). Make sure you don’t over stir and break up the apple pieces. In terms of the sugar, remember that you can always add, but it’s hard to take sugar away. Start modestly and add 1/2 cup at a time.
  4. Add the citric acid and continue to stir until jam starts to congeal.
  5. Allow to cool to room temperature, then store in jars. To seal the jars, tie the lids very tightly, then place then in a pot of very hot, but not boiling water. This isn’t quite a traditional seal, meaning you shouldn’t sell this jam in this condition. However, for personal use/consumption, this method of jarring will easily last 1-2 months under refrigeration.
