If you don’t know me too well by now, you should know that I’m quite obsessed with chicken salad. To me, chicken salad is one of the perfect vehicles for tasty and healthy dishes using leftover chicken.
And these days, I’ve been eating A LOT of chicken.
One of my very first recipes for this site was actually a chicken salad recipe. I randomly discovered this recipe a while ago, and it’s been a hit with just about everyone I’ve served it to.
But even the best chicken salad recipe can get boring. Not to mention, those
giant dollops of mayo were starting to affect my waistline
That’s why today I’ve revamped my traditional chicken salad and provided you with an Asian chicken salad! This salad is loaded with lean protein, antioxidant-rich veggies, and even a dose of healthy fat. This Asian chicken salad is by no means a traditional Asian dish, but it does tap into traditional Asian flavors like cilantro, lime, tamari (that’s gluten-free for soy sauce), and ginger. Oh, and about that ‘no mayo’ thing I was so adamant about in the title. Instead of using a traditional mayo, I opted for a vinaigrette dressing that has fewer calories but still ties the veggies and protein together. You’d be amazed what a little tamari, rice vinegar, lime, and oil will do.
Honestly, I don’t have much else to say for today. Sure, I could go into the health benefits of red bell peppers or the anti-inflammatory properties of ginger. Or how you can easily take this dish to work for lunch, eat it on its own, in a wrap, or even on a bed of nutrient-dense greens. But I really don’t think I need to do that today. Put simply, this Asian chicken salad tastes amazing and it actually really good for you. So what’s stopping you from making it?!
