Greetings! It’s been a while to say the least. I apologize for not blogging for three (okay, five) months. But I’m finally back!
While I was ‘gone,’ I’m happy to say that I have completed my MS in Nutrition Education. What a total relief! Not that I don’t enjoy learning more about food and nutrition, but after 20 months of round the clock studying, I’m pretty sure I’m due for a break.
This week’s post is all about getting back to school! The first day/week of school isn’t just a big milestone if you have a family with children. To me, it also signifies the close of summer and the start of fall. Even if you’re not putting a little one of the school bus this year, you can definitely identify with the end of summer vacations, day drinks, pool parties, and all those other fun summer pastimes.
To help with the often hectic transition, I’ve put together a list of recipes and meals you can easily prepare and that everyone will love. Some are totally unique. Some are pretty standard, healthy recipes that maybe you’ve forgotten about. Some are recaps of recipes I’ve previously posted. And some I’ve totally ripped off from other people (providing a backlink of course). The point is, let’s get inspired about eating well this season! With a little prep and a few ingredients, it really isn’t that difficult.
Breakfast
Try making avocado toast…

Omelettes are a great way to work protein and vegetables into a meal.

And when all else fails, you can try my original sweet potato breakfast!
Lunch
Buddha bowls are a great way to use up leftovers for lunch.
You also can’t go wrong with my chicken salad. It’s a simple way to eat last night’s chicken!
There’s nothing wrong with a classic turkey sandwich.
Or a slightly different take on PB & J.
Dinner
Who doesn’t love pesto pasta primavera?!
These gluten-free enchiladas look pretty bomb:
I’ll admit that I tried making this a few days ago, and it was delicious.
And finally, I couldn’t leave you without my amazingly healthy turkey meatballs!
And there you have it! Healthy eating really comes down to great ingredients and simple preparation methods. What are some of your favorite go-to meals on crazy weeks?
